IT’S MY HOME IT’S MY HOME FINE DINING AT HOME Baked snapper n Whole snapper (medium size) n 1 lemon sliced into rounds n Lemon and seaweed butter (from recipe above) 1 Preheat oven to 180 degrees celsius, fan forced 2 Cover the fish and the cavity liberally with the seaweed butter 3 Place lemon slices inside the cavity and on top 4 Bake for 20mins or until fish is cooked through 5 Reserve extra butter for serving. BAKED SNAPPER WITH LEMON AND SEAWEED BUTTER Serves 2 Lemon and seaweed butter n 20g nori sheets (dried seaweed) n 70g lemon juice n Zest from 3 lemons n 300g butter n 5g fine salt 1 Blitz nori sheets into a fine powder 2 Place all the ingredients into a food processor and blitz until smooth and combined. KYLIE MILLAR SHARES A FEW OF HER DELICIOUS AND EASY TO MAKE RECIPES WITH IT’S MY HOME Crispy baby potatoes with miso sour cream n 1kg baby chat potatoes n Oil for frying n Flaked sea salt 1 Place potatoes in a pot, cover with cold water and bring to the boil. Boil until just soft 2 Remove potatoes from the pot, allow to cool. To save time, you could do this the day before 3 With the heel of your hand, crush the potatoes into a pattie shape 4 Heat oil in a pan, shallow fry potato patties until crispy and golden on both sides without the fuss 5 Drain on paper towels and sprinkle with salt 6 Place in the oven (180 degrees) to keep warm, until ready to serve. Miso sour cream n 50g white miso (I like to use meru miso, but you can use any miso) n 200g sour cream n Juice of half a lemon Mix all ingredients and place in a bowl to serve.
