10 IT’S MY HOME IT’S MY HOME BURNT BASQUE CHEESECAKE WITH BLISTERED HONEY GRAPES AND PUFFED GRAINS Serves 8-12 Burnt Basque cheesecake n 1200g cream cheese n8eggs n 500g sugar n 600g crème fraîche/sour cream n Pinch salt n Puffed grains (amaranth/quinoa/buckwheat) 1 Pre-heat oven to 200 degrees celsius, fan forced 2 Beat in a kitchen aid cream cheese, eggs and sugar until combined 3 Add crème fraîche/sour cream and mix until combined 4 Pour into a lined spring form cake pan 5 Bake for 30-40 mins until top of cake is a dark brown, but still has a slight wobble when you move it. Blistered honey grapes n 1kg red seedless grapes n 200g butter n 200g honey 1 Place butter into a large fry pan and melt over a medium heat 2 Put grapes into the pan and increase to a high heat 3 Cook until the skins start to blister and crack 4 Add in honey, swirl in the pan until combined 5 Drain liquid and reserve to serve. To serve Place cheesecake on plate with grapes on top, followed by a selection of puffed grains. Drizzle the grape syrup over and enjoy!
